My husband's daughter and I were chuckling via text that all we want to do right now is make (and eat) soup. And mac and cheese, but I'll save that for another post. What's not to love about homemade soups? They are so comforting and warm, usually one-pot and fairly hands-off, and are great as leftovers!

So in that spirit, I thought I'd share some of my favorite soup recipes from around the webs. Let me know which ones you try!

Green Soup: this is a tried and true and ver-sa-tile recipe. Want to use a different green? Cool. A different herb? No problem. Not into potatoes? Add some grains or another starchy veg. Easy peasy.

Creamy Tomato Soup with Cheese Toasties: nothing not to love here. One pot? Yes. Pantry ingredients? Yup. Tomatosoupandgrilledcheese? I mean, come on.

Curried Lentil and Tomato Soup: another pantry-staple soup. And one of the commenters says it's the only vegetarian soup her husband will ever eat. If that's a worry for your house.

Cheddar Apple Beer Soup: this one's a bit more complex (but not difficult!), but it's got all the Fall things. I didn't feel the crumble was really necessary and also subbed vegetable broth. You can also use less cheese and it will still be good. Visit the Farmer's Market to pick up some local apples for this one.

Broccoli Cheese and Potato Soup: I have messed around with this recipe too. I use evaporated milk instead of fat-free, use vegetable bouillon instead of chicken broth, and don't use the American cheese. But try it as is if you like for a super satisfying homemade bowl of delicious.
